Blueberry Banana Muffin GF
This blueberry banana muffin recipe has been a favorite in my house. I can’t make them quick enough.
I use frozen blueberries for this recipe. My kids love them.
Ingredients
1-½ cup Bob’s Red Mill 1-to-1 Gluten-Free Baking Flour
½ cup almond flour
2 tsp baking powder
½ tsp salt
½ cup butter, softened
1 cup maple syrup
2 eggs
1 tsp vanilla
½ cup milk
1-½ cup blueberries
3 medium size ripe bananas
Preheat the oven to 375 °F.
In a bowl add the gf baking flour, almond flour, baking powder, and salt; mix to combine. In another bowl add the butter, eggs, milk, bananas, maple syrup, and vanilla; whisk to combine. Add the wet ingredients to the dry and mix. Once well incorporated, add the blueberries (I used frozen berries). Place in your muffin pan and bake for up to 25 min.
