Honeynut Squash Loaf
Ingredients
2 cups all-purpose flour
½ teaspoon salt
1 teaspoon baking soda
½ teaspoon baking powder
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup salted butter, softened
1 1/2 cups brown sugar
2 large eggs
1 roasted honeynut squash, seeds removed.
Preheat your oven to 400℉.
Slice the butternut squash in half, remove the seeds, and place on a baking sheet. Roast for about 25 - 30 minutes. Let it sit on the counter and cool.
Change the heat of your oven to 325℉.
Add the butter and brown sugar to a standing mixer and mix until creamed. Add the eggs and continue to mix until well incorporated.
In another bowl, add the flour, salt, baking soda, baking powder, cloves, cinnamon, and nutmeg. Whisk all the dry ingredients together.
Add the dry ingredients to the wet and then spoon out the inside of the roasted butternut squash and add to the mixed batter.
Divide the batter between two loaf pans and bake for 1 hour, or until the cake tester inserted into the center comes out clean.
