Summer Cobbler

Peach Cobbler (GF, Serves 8) 

  • 1-½ cup brown sugar, divided 

  • 3 cups Red Mill One-for-One GF flour  

  • 1 teaspoon baking powder 

  • ¼ teaspoon salt 

  • Zest and juice of one lemon 

  • 1 cup cold butter cut into pieces 

  • 1 egg, beaten 

  • 1 tablespoon tapioca starch 

  • 4 cups peaches (or any berry you like) 

 

  1. Preheat the oven to 375 °F. Grease a 9×13-inch pan or use a round pie pan. 

  2. In a medium bowl, stir together 1 cup brown sugar, GF flour, and baking powder. 

  3. Mix in salt and lemon zest. Mix in the butter; I use my hands to break it up, but you can use a fork or pastry cutter. Add the egg. Dough will be the consistency of wet sand. Pat half of the dough into the prepared pan. 

  4. In another bowl, stir together the remaining brown sugar, tapioca flour, and lemon juice. Gently mix in the fruit. Sprinkle the fruit mixture evenly over the crust. Crumble the remaining dough over the fruit layer. 

  5. Bake in preheated oven for 45-55 minutes, or until top is slightly brown.
